One of my favorite delicacy from the Ilocos Region, where my dad grew up, is Bibingka. There may be stores selling native delicacies here in Manila but nothing beats the real thing. Bibingka is a type of rice cake with milled glutinous rice and coconut milk as its main ingredients.
My dad doesn’t fail to bring home a big box or two of Tongson Original Royal Bibingka everytime he visit his relatives in the province. Compared with the usual bibingka’s, this bibingka is more creamy and deliciously sticky. Although a bit on the sweet side it becomes even more delicious when partnered with brewed coffee.
